Kale Sweet Potato and Turkey Meatball Soup

Cozzying up in a large sweater with a hot bowl of soup is one of the best parts of fall, who agrees?! Here we have a hearty soup that is inspired by the Portuguese sopa verde and Italian wedding soup. Sopa verde is typically made with collard greens, potatoes and beans. My version uses kale, I love the bite kale adds to a soup. And sweet potatoes, for its added antioxidants and fibre. The mini turkey meatballs are inspired by Italian wedding soup but they can be easily left out to make this soup vegetarian! Then I would add lentils or barley to replace the turkey.

Ingredients:

1 large sweet potato, peeled and chopped

4 leaves of kale, chopped

1 large carrots, chopped

1 onion , finely chopped

900ml of vegetable stock

1 cup water

2 tbs butter

Ground turkey

Italian breadcrumbs

salt and pepper to taste

 

Directions:

In a large pot on high heat add the butter, once it starts to melt add in the onions and carrots, stir everything and let cook for 3 minutes or until onions start to become translucent. Add the sweet potato and the vegetable stock and one cup of water. Bring to a simmer, lower the heat to low an put the lid on the pot to cover. Meanwhile put 3 parts turkey and 1 part breadcrumbs into a bowl, season with salt, mix everything till combined and form mini meatballs. I used 1/2 pkg of turkey and about 2 tbs of breadcrumbs, and it made enough meatballs for 4 servings. The cooking time depends on the size you cut the sweet potato and carrot. Because as soon as they are fork tender the soup is done! I cut the sweet potato into 1/2 inch pieces and they took about 20 minutes to cook so I added in the meatballs and kale after 10 minutes, as they don’t  take as long to cook. Finish it off by seasoning with salt and pepper and enjoy!
