Potato Leek Soup with Sharp Cheddar Grilled Cheese

Double Recipe: Potato Leek Soup AND Sharp Cheddar Grilled Cheese

Name me something better than a hot bowl of soup with a grilled sandwich on a rainy day? I’m waiting…there is nothing better! Potato leek soup is really easy to make and its so perfect for leftovers. My recipe is super simple, and can be done in no time. Grilled cheese is very straight forward but I want to share with you some absolute musts when making the perfect grilled cheese.

First things first, the leeks. There is always a lot of dirt in them and if you don’t clean it all out it will give your soup a gritty texture. Start off by cutting off the thick dark green parts and the root. You’ll be left with the light green/white part. Then cut the leeks in half and run water over top to clean. Its SO important to wash the leeks properly. They have many layers so you need to wash in between EACH one.

The trick to the perfect grilled cheese is buttering the bread. This helps create the crunch we all love. Don’t be stingy with the butter either, put a generous amount on both sides. Its a simple trick but my mom never used butter on our grilled cheeses. The day I had one at my friends house, made with butter, was life changing.

Ingredients:

Soup:
2 large leeks, cleaned and chopped
4 medium potatoes, peeled and chopped
2 tbs butter
1 small onion, chopped
6 cups chicken stock
2 bay leafs
2 springs fresh thyme or 1 tsp dried thyme
Salt and pepper to taste
Optional: turkey bacon for garnish

Grille cheese:
2 pieces of hazelnut honey bread from Premiere Moisson
4 slices of sharp cheddar cheese
1 tbs butter

Directions:

In a large pot on medium high heat add the butter, leeks, potatoes and cook for about 4 minutes, stir occasionally. Then add the thyme, salt, pepper and bay leafs. Add the chicken stock and bring to a simmer and put the lid on top. Cook for about 15 minutes or until the potatoes are fork tender (a fork can easily go through the potato).  Remove the bay leaf and fresh thyme and puree with an immersion blender till smooth. Taste for seasoning and adjust accordingly. Top with turkey bacon and serve along side the grilled cheese.
