Turkey Meatballs in a Spicy Marinara Sauce over Creamy Polenta

Polenta is one of those dishes that is extremely easy to make (if you use the instant one). You can add flavour with cheese, lots of it. But the main reason why polenta is so great, is its ability to absorb any sauce you put on it. Topping it with a beautiful tomato sauce is magical! Throw some massive meatballs in the mix and you’re set. Its an uncomplicated dish, composed of just three things: polenta, meatballs and tomato sauce. I love this dish because its made with simple, quality ingredients, which absolutely represents the true essence of Italian cooking.

Ingredients:

1 pack minced turkey
1/4 Italian breadcrumbs
Salt pepper to taste
Homemade tomato sauce…I will post my family recipe one day!
1/2 tsp hot chilli peppers (more or less depending on the heat level you want)
1 tbs extra virgin olive oil
Instant polenta
1/2 of your favourite cheese grated, I used lactose free Gouda
1/2 parmesan cheese, grated

Directions:

For the meatballs I like to keep it simple. We used to add so many ingredients and then one day my mom tried making them with just turkey and Italian breadcrumbs, and they were SO good?! Just use one small pack of minced turkey, 1/4 cup Italian breadcrumbs and salt to taste. These meatballs are so tasty they really don’t need onion, garlic or eggs! I like to brown them in a pan and then finish them in the sauce.

Make your classic tomato sauce but add some hot chilli to the oil before adding the onions in. Toasting the chilli in the oil will give your sauce a beautiful spice.

I cheat and buy the instant polenta. You just need to add the polenta to boiling chicken stock and Its done after about one minute of stirring. Which is no time at all! Then add half a cup of your favourite cheese, and if you want to be decadent add a dollop of butter to make it extra velvety. Put a spoonful of the polenta on the base, top it with some meatballs and pour a generous amount of tomato sauce over top. Grate a TON of parmesan cheese over it and enjoy!
