Homemade Classic Gnocchi

Homemade Classic Gnocchi with Moms Tomato Sauce

In the past I’ve struggled with gnocchi, I found they were either too soft, too sticky, too rough or too dry. This recipe doesn’t present any of those issues, instead it’s PERFECT! So here it is; the best gnocchi recipe.

Ingredients:

4 medium potatoes
1 cup flour +extra
1 egg
Salt to taste
Homemade tomato sauce (family recipe to be posted soon!)
Parmesan cheese, grated

Directions:

Cut the potatoes in half and microwave for 10 minutes then roast the potatoes for 15-30 min in the oven at 400 until a fork can puncture the potato easily. Once they are cooked scoop the flesh and mash it. To that add 1 cup flour, 1 egg and a pinch of salt. Combine everything and then kneed until combined. If it’s sticky add more flour. Separate into 4 balls. On a floured surface roll each ball into a long log about 1 cm high. Cut the dough into 1 inch pieces. Use a fork to give the gnocchi their signature look. Simply press and roll the gnocchi down on the fork.  Bring water to a boil, add salt to the water and cook the gnocchi in batches. When they float to the top they are done! Serve with a delicious creamy tomato sauce, top with parmesan cheese and Buon Appeito!
