Slow Cooker Chipotle Chicken Taco with Homemade Tortillas

These tacos are a game changer thanks to the homemade tortillas and the six hour slow braised chipotle chicken. They are, simply put, the best tacos I’ve ever had. The best part is the use of the slow cooker. Once you put all the ingredients in it you can step away and quite literally forget about it. Six hours later the house will smell amazing and you will have successfully cooked a delicious meal! Easy as that.

Tacos and Tequila go hand in hand. Tacos also happen to be my favourite food, and tequila happens to be my favourite drink. So I hope you can tell I am very passionate about this post. The perfect pairing to these slightly spicy tacos is the famous Tequila Sunrise. Here is a quick BONUS recipe:

Tequila Sunrise:
In a tall glass fill with ice, add tequila (I used Hornitos) and orange juice, stir. Then pour in grenadine syrup. Garnish with orange and maraschino cherry. Cheers!

Ingredients:

Chipotle Chicken:
5-7 chicken thighs
1/2 onion thinly sliced
2 cloves garlic, chopped
2 tsp cumin
2 cups lemon lime soda
1 can chopped tomatoes
Salt to taste
4 chipotle peppers in adobo sauce

Tortillas:
1 cup flour
1/4 tsp baking powder
1/2 tbs margarine
1/4 tsp salt
1/3 cup water

Directions:

In a slow cooker add: chicken thighs, onion, garlic, cumin, lemon lime soda, tomatoes and chipotles in adobo sauce. Mix everything together, cover and cook on high for 5-6 hours. Your house will smell amazing!!! Once the chicken is cooked remove from the sauce, shred it, blitz the sauce, add salt to taste and then add the chicken back in.
Tortillas: (makes 8 tortillas ) Mix all the dry ingredients and then add the water. Knead on a floured surface for a couple of minutes and then roll into individual balls. Roll them thin on a floured surface and then pan fry on high till golden on each side! Homemade tortillas are life changing.
Assembly: take your homemade tortilla, add the chipotle chicken then top with homemade guac, radish, and cilantro.
