Broccoli Quinoa and Cheddar Bites

Simple and Delicious Broccoli Quinoa and Cheddar Bites

Cheesy and oh so easy to make, these healthy quinoa bites are sure to become a family favourite. Cheddar and Broccoli go so well together (cream of broccoli soup case and point). So I thought why not throw some quinoa in there and make a healthy snack or side dish. Throw two or three of these next to a beautiful breaded chicken or seared tofu and you’ve got a complete meal!

The ingredients are simple: one small head of broccoli, a large carrot,  sharp cheddar cheese, cooked quinoa, mustard powder, garlic powder and eggs.

Simply grate and cheese and carrot and finely chop the broccoli, seen in the photo above. I use Keens mustard powder, I absolutely love the flavour it adds. Its best used in coleslaws, dry rubs and my delicious pulled pork!

These quinoa bites are packed with vitamin dense broccoli and aged strong cheddar. Flavoured with garlic powder and nutritional yeast, they are simple to make but very tasty!

Ingredients:

1 small head broccoli, finely chopped
1 large carrot, finely grated
1 cup cooked quinoa
1/4 cup sharp cheddar cheese, grated
1 tbs nutrional yeast
1/2 tsp garlic powder
1/2 tsp mustard powder
2 eggs
Salt and pepper to taste

Directions:

In a pot add quinoa and stock, bring to a boil, cover and lower heat to a simmer. Leave covered to cook for about 10-15 minutes. Make sure to stir it so it doesn’t get stuck at the bottom! Once all the stock is absorbed the quinoa should be done. If it isn’t add more water. Let the quinoa cool for 5 minutes off the heat.
In a large bowl mix together all the ingredients. Line a muffin tin with silicone muffin cups. OR grease the tray and lightly tap flour over it. This is a very important step or else they will stick. Fill each muffin cup with the filling. This recipe makes 24 mini bites, or 12 big bites! Pop it in the oven at 350 for 20-22 minutes. Let them cool completely before removing from the muffin tin. If you didn’t use silicone muffin cups, use a knife to cut around the edges to loosen them up before removing them from the tray. They are delicious reheated or room temperature.
