Arugula Salad with Grilled Figs and Halloumi Cheese,
With Fresh Tomatoes from Zia Angie’s Garden and a Balsamic Crema Drizzle. Add extra flavour to any salad by simply grilling your fruits or vegetables. Grilled peaches? Yum! Grilled cauliflower? Yes please! This combination right here is the best though. The saltiness from the cheese and the sweetness from the figs compliment each other so well. This is one of those salads where the ingredients really shine, that’s why a simple EVOO and sherry vinegar dressing is all you need.
Ingredients for 1 serving:
2 fresh figs, halved and grilled
1 large tomato, sliced
2 pieces halloumi cheese, grilled
Balsamic crema, to drizzle over
2 cups Arugula
1 tbs extra virgin olive oil
1 tsp sherry vinegar
Salt to taste
Make the vinaigrette with the extra virgin olive oil and sherry vinegar. Toss the arugula in the vinaigrette and top with grilled figs, cheese and tomatoes. Drizzle balsamic crema over the entire salad and enjoy!
