Easy Homemade Spinach and Artichoke Dip Pizza

You could even prepare it in advance, and then pop it in the fridge until you’re ready to cook it.
I always prefer to make homemade pizza dough, simply because it tastes better and I know all the ingredients in it. Pre-made foods always tend to be full of many additives, so homemade when possible is always the way to go in my books. With that being said, this was the first time I used store bought dough and I didn’t mind it at all. In fact, the brand I bought had only ingredients I’ve heard of before-so that was good! It cooked well and had a great texture. If you are pressed for time, use store bought dough, it can be found in the frozen aisle. Choose one with natural ingredients that you recognize like flour, yeast, water and salt.
The spinach and artichoke dip recipe is fairly light, there is no mayonnaise or cream. Instead light cream cheese and sour cream are used to add creaminess. Also, the ratio leans more towards spinach and artichoke than cheese. And the last time I checked, more vegetables than cheese is a good thing-woo!
My favourite part about this pizza is the cheesy, tangy, ooey spinach artichoke dip on top. This recipe uses a lighter alternative to the classic high fat version. The best way to eat this pizza? Rip a piece of the crust off and use it to scoop up that melty cheese and spinach topping.

1/4 cup finely grated parmesan cheese
1/4 cup of grated mozzarella
4oz of light cream cheese
10oz each of spinach and artichoke hearts chopped
1 clove minced garlic
1/3 cup of sour cream
1 ball of mozzarella sliced into thin rounds
Pizza dough for two 12inch pizzas
Mix everything together and pop in the fridge for 10 min. Roll out your pizza dough on a well floured surface and spread thin slices of mozzarella to cover. Scoop balls of the spinach mixture over the cheese and flatten down with a spoon. Brush the sides with olive oil and pop in the oven at 400 on a pizza stone for 15-22 minutes or until dough is cooked through and the cheese is melted and bubbly.
